Ingredients:
1/8 tsp lemon extract
2 tbsp raw agave nectar
3/4 cup of freshly juiced orange*
1 large egg, beaten–or egg substitute
1 tbsp grapeseed oil–or oil of your choice
1 cup Arrowhead Mills Organic Gluten Free Pancake & Baking Mix
Optional:
1 tsp Olivio
spray coconut oil
the zest of an orange
drizzle of sugar free maple syrup
Instructions:
1. whisk all ingredients together
2. spray pan with oil
3. heat turned up to medium high
4. pour 1/2 cup of mix onto pan
5. when bubbles form, flip
6. cook for a minute or two
7. set aside on a plate
8. repeat till batter is gone
9. drizzle with maple syrup
10. top with olivio
11. sprinkle with zest
Serves:
approximately 3-4
* I recommend you use a juicer for this as it will only take approximately one orange but it can also be hand squeezed if one is not readily available to you. DO NOT use store bought orange juice for this, it will NOT taste the same.
