Cajun Tilapia Stir-Fry

I am exhausted and a bit annoyed. I was trying to fix a painting in the living room that seemed crooked, damn you OCD! I did this all while standing on my couch and fell back. GRRRRR! I ended up breaking my left big toe nail in half vertically. It is just terrible.

Due to this, my blog post is short and my meal is simple. xo



2 (5 oz) tilapia filets, cubed

2 cups kale, chopped

1 tbsp coconut oil

1 tbsp Tony Chachere’s seasoning

½ lemon, squeezed



  1. Cube tilapia
  2. Chop kale, leave the stems
  3. Lightly grease pan with oil
  4. Add fish
  5. Cook until browned
  6. Add kale
  7. Cook until wilted
  8. Add seasoning
  9. Squeeze lemon over hand to avoid seeds in your pan
  10. Serve when kale begins to get crispy
