I am back from my travels, my lovelies! Sadly, I had no Wi-Fi connection while abroad working but I am back, nonetheless.
About 2 months ago, I went down to Miami and stayed with my parents for work purposes. I am sure I told you all. Did I? Who knows… Well! While on my stay, of course I got my own groceries to eat the food I make for me, which I am ever so grateful they paid for, too. Unexpected to find, I found a delicious dressing that had sugar waayyyy down on the bottom of the ingredient list. This dressing has served so much purpose during that stay as well as in my household and on several other travels—I take it with me—and now it is time to share it with all of YOU.
It’s easy to find in stores. I guess I overlooked it many times before. Mango Chipotle Vinaigrette, simple and delicious. Here is a recipe I made several times before leaving but have quite forgotten to post. Although I will be updating the blog today with some fabulous recipes and annoying ranting, this one is just on me. *Wink*
2 cups kale/spinach mix
2 Aidells mango chicken sausage link
¼ cup mango chipotle vinaigrette dressing
- In a Tupperware bowl, add greens
- Cut the sausage in half and, then, into tiny little pieces
- In a small pan with no oil, cook sausage until browned
- Throw sausage on the greens
- Drizzle dressing
- Seal the Tupperware and SHAKE till mixed!
- Serve in a pretty bowls
