Beet Burgers

Tired of being up all day from working to errands to cooking. I came up with this quickly for my day 2 dinner of “The 5 Day Detox”Scrumptiously prepared, I couldn’t believe what a hit these could turn out to be! Who would know that juice pulp can do such a thing? I got the inspiration a few weeks ago from my friend Maria, known on Instagram as @the_clean_way, but I did not think they could taste this good.

I gave her recipe a twist from what she used because I wanted to stay within the margins of what’s on the shopping list for the detox. Mmm, mmm, mmm. Heavenly bites of burger and health all together. I think next time I will make a rendition of “veggie ‘meat’ balls”. It’s amazing to do this because you get to save the juice pulp and use something you would have otherwise thrown out. Ingredients:
juice pulp from “Beets of Love”
1 tbsp garlic powder
1 tbsp hamburger seasoning
1 tsp all purpose seasoning, salt-free
2 tbsp avocado oil
spray coconut oil
Bill Bragg’s amino acids, to taste
handful chives, chopped
1 lime

Instructions:
1. when juicing “Beets of Love”, process beets + broccoli first–saving the pulp excluding the apples
2. in a food processor, pulse juice pulp, oil + seasonings until smooth
3. roll the pulp into balls + press down to create a patty
4. repeat until no pulp is left
5. spray a large pan with coconut oil + cook burgers on medium heat
6. spray each burger with aminos, cooking each side for 3-5 minutes
7. top with chives
8. squeeze lime juice over the burgers
9. enjoy in lettuce wraps or alone
