Southern Stuffing



For the cornbread:

1 box of gluten free cornbread mix
1 large egg
1 liquid egg white
1 cup water
1/3 cup dried cranberries
1/3 cup chives, chopped
1 cup kernel corn
¼ cup hemp seeds
spray coconut oil

For the vegetable stir-fry:

1/3 cup butter substitute/coconut oil
1 bunch of celery stalks, roughly chipped
1 large Vidalia onion, diced
3 large carrots, peeled long and thinly
2 tbsp Montreal chicken seasoning
2 tbsp Bill Bragg’s amino acids

1. preheat oven to 350 F
2. in a medium mixing bowl, whisk together your GF cornbread mix, eggs, and water
3. once mixed well, add your other ingredients and mix them in thoroughly
4. using spray coconut oil, spray a cake pan lightly
5. fill cake pan with all the batter
6. bake for 30-35 minutes
7. meanwhile you are making your cornbread, chop/peel/dice all your veggies for the stir-fry, this will be mixed in later with crumbled cornbread
8. heat a medium pot to medium-high heat
9. melt your butter/oil in the pot
10. once this has melted and spread evenly in the pot, add your celery and stir around for 5-6 minutes
11. lower the heat a tad and add your Vidalia onion and stir in the first tbsp of Montreal chicken seasoning–this is does not contain animal byproduct just seasonings
12. at this time, add your carrot noodles
13. add the second tbsp of Montreal chicken seasoning along with your aminos
14. remove your cornbread from the oven and refrigerate for 15 minutes, KEEP THE OVEN ON
15. bring the heat of your veggies down to medium-low and continue stirring as the juices marry together covered.
16. once the celery seems caramelized and the carrots seem al dente, remove from the heat and remain covered
17. bring out the cornbread from the fridge and crumble into a large bowl with your hands
18. uncover your veggies and scrape every last bit of delicious goodness onto your cornbread crumbles, mix this very well
19. using the same cake pan as earlier, add your stuffing to the pan and bake for 45 minutes at 350 F
20. remove from oven and stuff your turkey or serve as a wonderful side for your Thanksgiving or holiday party spread
