Sweet Mango Cups

1 ripe mango
10 cupcake liners
1/2 cup coconut oil

1. peel mango of all skin
2. cut into cubes
3. remove seed
4. attempt to remove fruit flesh attached to the seed
5. if mango is juicy enough to just whisk together with the coconut oil, do so now
6. if the mango is fairly chunky, pulse a few times in the food processor until creamy
7. pour 2 tbsp of mix into each cupcake liner
8. freeze for 20 minutes
9. these can be served all at once or saved in the freezer for the occasional sweet tooth


* They will keep in the freezer for up to 2 or 3 weeks.
