Frozen Banana Bites

1 toothpick
4 tbsp pistachio butter
1 tbsp organic maple syrup
2 medium ripe bananas, sliced
1 bar Lindt 85% dark chocolate
1/4 cup unsweetened shredded coconut

1. prep a cookie sheet with parchment paper
2. cut your bananas leaving off the ends–should have about 30 slices
3. place them on the sheet
4. add a dab of pistachio butter to 15 of the slices
5. cover the filled banana slices with one of the remaining slices
6. freeze bites for 15 minutes
7. use 4 rows of the 5 that come in the Lindt dark chocolate bar
8. break the chocolate into small pieces
9. cut the remaining with a good knife
10. place in a small glass prep bowl
11. microwave for 45 seconds on high
12. stir well while adding maple syrup (should be at room temperature)
13. remove bites from freezer
14. lay your coconut of a small plate
15. grab one of the banana sandwiches with a toothpick and gently roll the sides in the chocolate
16. remove any excess chocolate
17. quickly roll around in the coconut–the frozen bites will rapidly freeze the chocolate on it’s own
18. sit the banana bite back onto the parchment
19. repeat steps 15-18 until you are all done
20. place your frozen banana bites in a convenient freezable tupperware for quick snacking
