Bacon Scallops

16 toothpicks
1/2 lb large scallops
16 slices turkey bacon

1. preheat to 350° F
2. separate your slices of bacon on a baking sheet
3. heat a pan to medium-high heat
4. sauté your 16 scallops until browned on both sides but not cooked all the way through
5. insert your bacon into the oven
6. bake the slices for 10 minutes
7. remove the scallops from heat
8. take the bacon out to cool
9. when bacon is cool to the touch, place them on another plate
10. place the scallops on the baking sheet
11. now, we are ready to wrap these babies!
12. grab a slice of bacon, fold it in half horizontally, and slowly wrap it around the a scallop
13. grab a toothpick, insert it about 1/4 inch away from the end of the bacon and puncture it through to the other end
14. repeat till all scallops are wrapped in bacon
15. remember there is no need to spray the baking sheet as the bacon scallops will be cooked in the bacon fat from having previously pre-cooked the slices in the oven
16. you can serve these delicious bites of seafood goodness with a side of asparagus and a salad, as I did
