Quinoa Pizza Bites

Quinoa Pizza Bites

1 large egg
1 cup water
pinch of sea salt
spray coconut oil
1 tbsp chia seeds
1 tbsp hemp seeds
1/2 cup pizza sauce*
1 tsp oregano, dried
1 tbsp garlic powder
1/ cup fresh mozzarella
1/2 cup onion, chopped
1 tsp basil leaves, dried
white pepper to the taste
1/2 cup uncooked quinoa
1 tbsp pecorino romano, shredded*
1 tbsp Hidden Valley ranch powder
few sprays Bill Bragg’s amino acids

1. preheat oven to 350° F
2. in a microwave safe bowl, place your uncooked quinoa with the one cup of water
3. microwave for 15-20 minutes or until the germ layer has separated well from the grain
4. microwave your fresh mozzarella for about 30-45 seconds
5. add all ingredients to the quinoa EXCEPT the sauce, pecorino romano, and aminos
6. mix everything well until it become a big ball of dough like material
7. let the dough air cool for about 10 minutes
8. spray your cookie sheet with coconut oil
9. roll the dough into tbsp size pizza bites
10. spray each bite with aminos
11. place in the oven for 15-20 minutes
12. microwave your pizza sauce COVERED for 30 seconds, you do not want a bloody red microwave
13. mix in most of the pecorino but leave a little for sprinkling on the bites
14. serve them on a dish
15. sprinkle with a little pecorino

12 as hors d’oeuvres OR 6 with a side of salad or veggies

* I usually make some homemade sauce but I recently bought some in bulk at the store because they did not have any sugar AND I had a coupon. Double deal for me ;]. I am the money saving type of gal!

* You can sub out pecorino for parmesan, if you do not have any on hand.
