Chicken Rollatini Bites

Ingredients:
zest of a lime
12 toothpicks
spray coconut oil
Spinach Philly Medley
6 chicken tenderloins, halved
few sprays Bill Bragg’s amino acids

Instructions:
1. preheat oven to 275° F
2. make your Spinach Philly Medley
3. get out a cutting board designed for poultry
4. carefully slice each tenderloin horizontally across until you have 12 tenderloins
5. use about 1/2 a tsp to 1 tsp of the Spinach Philly Medley to spread on each tenderloin–depending on your own taste
6. set out your 12 toothpicks
7. now that all your tenderloins are lined up with their filling, it is time to roll up!
8. roll each loin into a rollatini–whatever way is best for you!
9. stick a toothpick in each until all bites are ready for the oven
10. spray your cookie sheet with coconut oil
11. go ahead and spread them out on the sheet evenly
12. spray them each over the top with your aminos
13. put in the oven for about 40-45 minutes (while also consistently monitoring them)make sure to set your timer
14. while they are in the oven, zest your lime
15. set aside the zest
16. remove them from the oven when the timer goes off
17. allow them to cool for about 15 minutes tops
18. serve
19. garnish or top with your zest

Serves:
12 as hors d’oeuvres or 6 as a small meal with a side of salad

* Perfect for a day out at the pool with friends or family.
