Carrot Cake Bites

1/2 cup water
1/4 cup raisins
2 tsp chia seeds
pinch of sea salt
1 tsp orange zest
2 tbsp coconut flour
1/2 cup almond flour
3 tbsp grape seed oil
1 tsp ground cinnamon
handful of hemp seeds
1 cup carrots, shredded
1/2 cup brown rice flour
1/4 cup walnuts, toasted
1 tsp pure vanilla extract
1/3 cup liquid egg whites
1/4 tsp pumpkin pie spice
1/2 cup coconut palm sugar
1/2 cup old-fashioned rolled oats
1/2 cup unsweetened shredded coconut

spray coconut oil

1. preheat oven to 350° F
2. mix all ingredients in a large bowl
3. let sit for a few minutes in the fridge
4. mix again thoroughly
5. spray cookie sheet with coconut oil
6. roll dough into balls
7. set balls on cookie sheet
8. bake for 25 minutes
9. let cool
10. top with extra hemp seeds
11. serve them and put away
12. DO NOT eat them till the next day–you will thank me as they taste MUCH better
13. when you are ready to eat some, make Sweet Philly Icing to dip them in
