Applecake Rings

Ingredients:
pinch of sea salt
spray coconut oil
3 tsp coconut sugar
3 tbsp Lactaid/water
1/2 tsp vanilla extract
2 tsp ground cinnamon
1 tbsp liquid egg whites
sprinkle of ground cinnamon
2 apples (color of your choice), cored and sliced–1/8 inch rounds
1/3 cup Arrowhead Mills Organic Gluten Free Pancake & Baking Mix

Optional:
zest of a lime
zest of a lemon
zest of an orange
sprinkle of Truvia/Stevia

Instructions:
1. mix all wet/dry ingredients except your 2 tsp ground cinnamon and apples
2. set the mix aside
3. core your apples and cut them into slices (you should have at least 5 slices per apple)
4. spray your pan and heat it at medium
5. dry the apples individually before dipping–they seep out their sweetness and this won’t allow the mix to stick
6. dip the apple slice and place on the pan
7. once the area around the slice bubbles up like a pancake, carefully flip it
8. from your 2 tsp of cinnamon, sprinkle a little on each apple after the flip
9. flip two more times to make sure the pancake is cooked
10. serve on a plate and set aside
11. repeat Step 5-10 till apple sliced are all cooked
12. serve topped with Nia syrup
13. add your zest*
14. sprinkle Truvia or Stevia on top

Serves:
4 as a snack and 2 as a mealdouble up to make as many as you’d like
