2 oranges, freshly juiced
1 tbsp unrefined coconut oil
8 oz bag of fresh cranberries
1/4 cup raw agave nectar

1. zest the orange before cutting or hand peeling off the rind
2. juice oranges through a juicer (if a juicer is not readily available, hand squeeze 4 oranges to get the same resultnot store bought)
3. cut your cranberries in half
4. add coconut oil to a medium pot followed by your berries
5. keep the temperature steady at medium
6. stir every few minutes until the berries begin to pop
7. add your orange juice and zest at this time
8. once you have the consistency that favors you, add the truvia and agave, or your preferred sweeteners
9. bring the heat down to low and continue to stir for 10-15 minutes
10. using a potato masher, mash the berries
11. serve in a mason jar
12. refrigerate
14. serve or you can keep it refrigerated/frozen until you come up with a yummy treat, or use on your Thanksgiving spread

I use it sporadically and it doesn’t spoil quickly. I would say I could use it in at least over 20 dishes.

* I personally use Truvia because it is easier to find here in Miami but any sweetener of your preference is fine as long as it is NOT refined or artificial–all natural.

* This is a recipe of my mother’s, Maria–hense the name. I want to recognize her here on my blog for teaching me all the skills I have in the kitchen. All those sick days that were spent in the kitchen did not go to waste. This is for you mom, I love you
