Love Bites

Ingredients:
16 dates
2 cups water
3 tbsp coconut sugar
1 tsp pure vanilla extract
1/2 cup almond meal/flour
1/2 cup old fashioned rolled oats
handful of unsweetened coconut flakes

Instructions:
1. boil the dates in 1 cup of water until water is practically evaporated
2. add all the remaining ingredients to your food processor–EXCEPT the water and coconut sugar
3. pulse a few times until it looks too dry
4. add the water little by little
5. yes, use the entire cup of water
6. the mixture should now be a little watery–this is OK
7. pour the mix into a tupperware and microwave for 2 minutes
8. sit out for about 5 to cool
9. use a melon baller to separate the little balls
10. now start to roll them into shape
11. once you have all your ‘Love Bites‘, sprinkle the coconut sugar on a small plate–preferably disposable
12. roll your bites in the sugar
13. bites can be refrigerated or can sit out–either way, gobble them down
14. now, bite into this little taste of love and see what it’s all about!

Serves:
16-20, solely dependent on size
